A Word from Our Owner

I wanted to take a second to introduce myself and tell you a little about how I got around to opening my own cake business, specializing in custom wedding cakes, birthday cakes, and more.

The name Layered came from my love of assembling and layering cakes. Of course, I enjoy decorating them as well, but the satisfaction I get from seeing perfectly even layers of cake and buttercream is my favorite step in making a cake. Watching someone slice into my cake and being amazed by those precise layers is my guilty pleasure. So naturally, Layered seemed like the perfect name for my cake business.

My career in pastry started when I was still in high school. I graduated a semester early, and I wanted to get out into the work force as soon as possible, so I applied for an apprenticeship at the Biltmore Estate. After interviewing I knew that this was one of the best decisions I could have made for my career. I was going to be working under an amazing pastry chef, preparing and serving desserts for lunch and sometimes dinner, as well as working large events and weddings throughout the Estate. In just a few months I was able to see how the industry worked firsthand and learn fundamental techniques before I had even been to pastry school. I continued to work on the Estate for three years while completing my degree.

In the fall of 2010, I began attending Asheville-Buncombe Technical College, majoring in Baking and Pastry. As part of my degree I had to complete a summer internship working at a local restaurant or bakery. I chose a local cupcake shop and worked alongside an AB-Tech Culinary graduate baking cupcakes and pastries for local farmers markets. I not only got baking experience but also got to see how a small business operates. While in school, my program covered not only baking but basic culinary skills as well. A few of my favorite classes were sugar sculptures, breads, and of course, cake decorating. I graduated in 2013 with my Associates degree in Baking and Pastry.

Since then, I have worked part-time at Imladris Farms, a local berry farm, making jams and seasonal butters for five years. My full time position is at Ultimate Ice Cream, where I am one of the main spinners creating new ice cream flavors regularly. I also bake fresh brownies, blondies and make all of the toppings served in our retail locations. And now, I own a custom cake business! I love that my passion for pastry isn’t just limited to my cake business and that I am able to express my creativity in different ways. Baking with seasonal, local ingredients is what fuels my company. Layered specializes in wedding cakes, birthday cakes, anniversary cakes, and more. But whether it’s a birthday party, baby shower, engagement party, or wedding, I hope you will let Layered bake your day!
